This simple slow cooker meal is perfect for cold winter days. If you love buffalo chicken, then you'll want to give this chili recipe a try.
The best part about this meal, is it's so easy to prep. You can even cook the ground chicken the day before so it's easier to just throw everything into the crockpot.
It's a little spicy, but the creaminess balances that our pretty well so it's a recipe that even the kids enjoy. This chili is perfect for game day parties too! You can make enough to feed a whole crowd. Just set your slow cooker to keep warm after it's cooked and it will be warm throughout the whole party.
The leftovers are great too, especially for a work lunch. We always store in individual pyrex bowls, so it's easy to grab and reheat.
This chili can also be made on the stovetop instead of the slow cooker. It's super quick and can be ready in around 30 minutes.

Slow Cooker Creamy Buffalo Chicken Chili
Ingredients
- 1 pound ground chicken
- 1 ½ cups frozen corn
- 1 - 15.5 ounce can of cannellini beans
- 1 cup canned fire roasted diced tomatoes
- 1 - 4 ounce can of diced green chiles
- 2 teaspoons chili powder
- 2 teaspoons cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 3 cups chicken broth
- ½ cup buffalo wing sauce
- 4 ounces cream cheese
- ½ cup sour cream
- shredded cheddar cheese, blue cheese, sliced green onions or fresh cilantro for topping, optional
Instructions
- Add the ground chicken to a skillet, and cook and crumble until fully cooked.
- Add cooked ground chicken to your slow cooker.
- Add frozen corn, beans, tomatoes, green chilis, chili powder, cumin, garlic powder, and onion powder.
- Then, pour in chicken broth and buffalo wing sauce. Stir well.
- Cook on low for 4-6 hours or high for 2-3 hours. 30 minutes before the slow cooker is done, add cream cheese and sour cream.
- Once cooking has finished, give everything a good stir. Cook a few minutes more if cream cheese still needs more time to melt.
- To serve, top with shredded cheese, blue cheese crumbles, green onions, cilantro, and anything else you’d like.
