I'm a Minnesota girl and I love fluff salads! They were at every potluck and holiday growing up and were always my favorite dessert.
Today's fluff salad is absolutely delicious, especially if you're a lemon lover!
This easy to make salad combines the some of the classic fluff ingredients like Cool Whip, Jello, marshmallows along with fruit, coconut and cottage cheese. I'm not a huge fan of the texture of cottage cheese, but you don't even notice it when it's mixed with the other ingredients.
It's sweet, citrusy and can be served in a large bowl, or in individual serving cups. It will be a hit served at any special occasion or celebration!

Recipe tips:
- Do not prepare the jello based on the directions shown on the box. You only need the powder.
- This can be covered and stored in the fridge for up to three days. It may accumulate some water. However, it’s not bad, simply drain the water and stir before serving. Do not freeze.
- I didn’t use any food dye in the photos shown. It is a very light yellow color, but you can add the optional food dye for a bolder yellow.
- If you don’t drain the crushed pineapple, it can potentially make the fluff soupy. It doesn’t have to be perfectly drained, but mostly drained is the best.

- use regular mini marshmallows instead of fruity

Lemon Fluff Salad Dessert
Ingredients
- 1 - 8 ounce tub Cool Whip
- 1 - 3 ounce box lemon Jello gelatin
- 1 - 20 ounce can crushed pineapple, drained
- 2 cups fruit flavored mini marshmallows
- 1 cup sweetened coconut flakes
- ½ cup cottage cheese
- 1 tablespoon freshly squeezed lemon juice
- yellow food coloring, optional
Instructions
- In a large mixing bowl, combine the cool whip and jello powder. Mix until combined.
- If you would like a brighter yellow color, add a couple drops of the food dye now. Mix until no color streaks appear.
- Add the remaining ingredients and fold it all together.
- Cover and place in the fridge for one hour.
