These spooky Jack o Lantern Quesadillas are the perfect lunch or dinner for Halloween! These are also great for a Halloween party.
They're so fast to make when you prep the tortillas ahead of time, serve with your favorite toppings and prepare for tons of laughs from your kiddos. Even the pickiest of eaters love these fun quesadillas.
The jack o lantern faces can be as simple or as elaborate as you want. Switch up the eye shape or the teeth, so each one is fun and different. These can be made on the stovetop, in the air fryer or baked in the oven.
I have great memories of going to Halloween parties and eating some of the coolest Halloween themed foods. I love to make those kinds memories with my kids too!

Recipe tips and substitution ideas:
- I recommend freshly shredded cheese for better melting and taste.
- Refrigerate leftovers in an airtight container for up to two days. Reheat in a microwave or air fryer.
- If you don't have a pumpkin shaped cookie cutter, you can cut them out by hand with a knife or kitchen scissors.
- These can be baked instead of pan frying. Place assembled quesadillas on a baking sheet lined with parchment paper and bake at 400 degrees F for 10-12 minutes or until cheese is melted. Air fryer works great too!
- Use any shredded cheese instead of colby jack. We also sometimes brush the tortillas with melted butter on each side before cooking.

Jack o Lantern Quesadillas
Ingredients
- 10 - 8 inch flour tortillas
- 2 cups shredded colby jack cheese
- 4 inch pumpkin cookie cutter
Instructions
- Use a 4 inch pumpkin cookie cutter to cut 2 pumpkins from each tortilla, or cut them out by hand with a knife or kitchen scissors. Set aside.
- Use a sharp knife and cutting board to carve faces into half of the pumpkin shapes.
- To a large skillet, add one of the uncut pumpkin shaped tortillas. Sprinkle cheese over top of the uncut shape.
- Add a pumpkin face tortilla, face down to the skillet as well.
- Once the cheese begins to melt, flip the pumpkin face over on top of the melted cheese.
- Make a note of the direction of the pumpkin stumps, you want them to be facing opposite directions when your pumpkin face tortilla is face down in the pan.
- Repeat for the remaining tortillas.
- Serve immediately with your favorite quesadilla dipping sauce or salsa.
