During the busy holiday season, quick and easy recipes are a lifesaver for our family. Even though I’m home most of the time, life with my one-year-old, and a busy 14-year-old keeps me on my toes. Between cooking, cleaning, and managing everything else, simple recipes are the way to go.
In just under 25 minutes, these delicious green candies are ready to enjoy! The crisp candy coating, crunchy almonds, and soft marshmallows create the perfect bite every time. It’s a treat that both kids and adults will absolutely love.
This recipe is also a fantastic way to get the kids involved in the kitchen. They can help measure ingredients, stir the mixture, and even handle the microwave (with supervision). Plus, it’s a wonderful way to spend time together on a chilly, snowy day, making sweet memories.
Another bonus? These candies are versatile! By switching the color of the candy melts and sprinkles, you can adapt them for any occasion—pink or red for Valentine’s Day, yellow or purple for Easter, or orange for Halloween. Have fun getting creative!

Recipe tips and substitution ideas:
- Rocky road candy comes in various styles. If desired, reduce the amount of marshmallows or almonds and add in a few other popular options such as candied fruit, dried fruit, walnuts, pecans, or even pistachios.
- If your chocolate seems extra thick, go ahead and add a bit more coconut oil and work it in, adding more if needed, until the desired consistency is reached.
- I don’t recommend using whole almonds as it makes the candy harder to eat. The almond slivers were the perfect size for the candy.
- Keep these candies in the fridge or freezer for the best results and longevity. They can be stored in a sealed container in a cool, dry pantry style setting, but they won’t last as long.
- If you can’t get any vibrant green candy melts, you can use another shade of green, or use white chocolate chips with a green oil-based dye.
- I chose to use coconut oil because it is solid at room temp, but it may add a slight coconut taste. Butter can be used instead.

Rocky Road Grinch Candy
Ingredients
- 12 ounce bag vibrant green candy melts
- 1 tablespoon coconut oil
- 2 cups mini marshmallows
- ½ cup almond slivers
- large red heart sprinkles
Instructions
- Line a baking sheet with parchment paper.
- Place the candy melts in a medium, microwave-safe bowl and microwave them on high for 3 minutes or until smooth and creamy.
- Stir every 30 seconds during the cooking process so you don’t burn the candy melts.
- Add the coconut oil to the mixture and stir until combined.
- Add the marshmallows and almonds. Stir until fully coated.
- Spoon onto the prepared baking sheet in heaping, big spoonfuls.
- Immediately top each candy with a red heart sprinkle.
- Place in the fridge to chill for about 10 minutes or until hardened.
- Transfer to an airtight container.
