These Oven Burnt Ends are packed with flavor and so easy to make! If you’re craving burnt ends but don’t have a smoker, this recipe is the perfect alternative. It’s especially handy during the winter when cold weather makes using a smoker less practical. Living in Minnesota, where it’s freezing right now, this recipe has become one of my go to options!

Beef stew meat is tossed with brown sugar, seasoning, and mustard, then baked in the oven until tender. Afterward, it’s coated in BBQ sauce and caramelized at high heat for that signature “burnt” texture. The result is tender, smoky flavored bites with a perfect caramelized crust. 

Pair them with coleslaw, cornbread, or your favorite comfort food sides for a complete and satisfying meal!

How to Make Burnt Ends in the Oven

Ingredients

  • 2 pounds beef stew meat
  • 2 tablespoons yellow mustard
  • ½ cup light brown sugar
  • 1 teaspoon liquid smoke
  • 1 teaspoon garlic salt
  • 1 teaspoon minced dried onion
  • 1 teaspoon steak seasoning
  • 1 teaspoon smoked paprika
  • 1 cup barbecue sauce

Instructions

  1. Preheat the oven to 300 degrees F.
  2. In a large bowl, toss the stew meat with the mustard, brown sugar, liquid smoke, garlic salt, minced onion, steak seasoning and smoked paprika.
  3. Place the stew beef in a 9x13 baking dish, cover with foil and bake for 1 1/2 to 2 hours or until tender.
  4. Take out of the oven, drain off any liquid, then toss the burnt ends in the bbq sauce.
  5. Raise the oven temperature to 450 degrees F, then bake until dark and caramelized, achieving the "burnt" texture and flavor, about 15 minutes.
