Did you know you can buy bags of Lucky Charms marshmallows online? It’s a childhood dream come true! I always wished for more marshmallows in my cereal. We also find them at a local bulk foods store, Cherry Grove Market in Browerville, MN.
These green pancakes, made with Lucky Charms marshmallows, are a fun and festive treat! Some marshmallows go into the batter, while the rest are sprinkled on top when serving. Our favorite way to enjoy them is with freshly whipped cream and extra marshmallows for a sweet finishing touch.
The pancakes are made with a simple homemade batter we’ve been using for years, but you can also use a boxed mix for convenience. This quick, easy, and budget-friendly breakfast is perfect for making family memories. You might even start a new tradition by serving them every year!
Feel free to change up the pancake color for different occasions or skip the food coloring altogether. This recipe is easy enough for kids to help with or even make on their own as they grow. Plus, we love using cooking and baking as a fun way to teach math in our house!

Recipe tips and substitution ideas:
- If your pancake batter is thin, check your baking powder. Even if it isn't expired but has been open awhile, it can affect the thickness of the batter. You can increase the flour by 1-2 tablespoons to make your batter thicker, or try again with new baking powder. Store bought pancake mix also works well.
- You can skip the food coloring and just use the Lucky Charms marshmallows.
- Please be aware that some of the marshmallows will melt on the griddle. We love using an electric griddle for big batches.
- We use 1% milk in this recipe, but any milk would work.

Lucky Charms Pancakes
Ingredients
- 1 cup milk
- 2 tablespoons vegetable oil
- 1 large egg
- 1 cup all purpose flour
- 1/2 teaspoon salt
- 2 tablespoons granulated sugar
- 2 teaspoons baking powder
- green food coloring, about 5-10 drops
- 1 cup Lucky Charms marshmallows, divided
Instructions
- In a bowl, whisk together the milk, oil and egg.
- Combine the dry ingredients in a separate bowl and add to the egg mixture. Whisk until the batter is smooth.
- Stir in the food coloring until combined. Then stir in 1/2- 3/4 cup marshmallows.
- Grease a skillet or griddle and heat over medium.
- Scoop the batter onto the skillet using 1/4 cup for each pancake.
- Heat until pancake bubbles and flip, about 2-3 minutes for each side, until lightly golden brown.
- Serve with syrup, remaining marshmallows, and whipped cream, if desired.
